Last Wednesday, May 28th, 2025, Watson took an important step forward in the honey pilot with the organisation of the first dedicated workshop, hosted by our Spanish partners ASINCAR and IGP Miel de Asturias.
The event took place at “Restaurante La Campana” in Pruvia (Asturias, Spain), and brought together 22 participants, including honey producers, quality control bodies and policy makers, among others.
WATSON showcases innovation in honey traceability
The workshop focused on presenting the results of our first validation campaign, which is centred on developing digital tools to preserve the authenticity of certified Asturian honey.
These solutions are being designed to provide fast, cost-effective support for identifying mislabelling or adulteration in high-value honey products.
Engaging stakeholders and building trust
This in-person session allowed our partners to connect directly with key local stakeholders, opening a valuable discussion on how technology can enhance the reliability of PGI certifications and support the broader goals of consumer protection and market transparency.
The event reinforced the importance of involving end users, regulators and industry representatives in shaping and validating Watson’s digital tools.
Feedback gathered during the workshop will help guide the project’s next steps and ensure that our technological developments are practical and impactful for the honey sector.
The Watson workshop also served to strengthen regional alliances and promote a shared vision for the future of traceable and trustworthy honey. With tools like Near Infrared Spectroscopy (NIR), Watson aims to empower food quality authorities and producers alike.
The successful organisation of this first honey workshop demonstrates Watson’s commitment to co-creation and local engagement.
