In combating food fraud, every actor in the food chain plays a crucial role—from producers and processors to retailers and consumers. To achieve traceability and authenticity in food systems across the EU, Watson is identifying key points where fraudulent activities are most likely to occur. Through its intelligent Early Warning System, Watson takes a holistic approach that integrates processing, operational and organisational levels, while also considering social, economic and sustainability factors.

Watson will validate its model through 6 use cases, focused on 6 agri-food sectors and tested in 6 European countries, considering different operational procedures and diverse environments to ensure functionality and effectiveness:

Tackling counterfeiting of wine in Portugal

Ensuring rapid traceability of extra virgin olive oil in Italy

Improving traceability in the cereal & dairy chains in Finland

Preserving authenticity of PGI honey in Spain

Identifying adulteration in the meat chain in Germany

Increasing transparency in the white fish chain in Norway

Additionally, the project will replicate its activities in at least 3 other EU countries: Greece (extra virgin olive oil use case), Ireland and France (meat use case).

Watson investigates the unique characteristics of each food chain to assess food fraud risks, presenting an overview of current operations, processes, and supporting technologies that enhance traceability and transparency.
